Does anyone here have any experience with GPS Vehicle Trackers or Data Loggers?

Real-time tracking would be nice and all, but I only need tracking for 4 or 5 months out of the year (so don't want to have to pay for a full-year subscription if I don't have to). A simple GPS data logger would suffice, but I would need one that (a) has sufficient battery capacity to last two weeks, or that could be connected to the vehicle's power supply, and (b) that has sufficient memory to record minute-by-minute tracking data for up to two weeks as well.

FWIW, the vehicles to be tracked are boats. They generally operate within range of cell towers (so don't need a satellite based system, if going with real-time). But we are operating in a harsh marine environment, so the trackers/loggers need to be up to dealing with that.

So does anyone have a favorite tracking service, or track logging device, they like?

There are apps that use the integrated capabilities of your smart phone to track your distance and position. If the boats are always in range of towers, it's probably a functionality that you can get on the cheap. I know for a fact that there's IFTTT recipes that can send your daily mileage to Google spreadsheet.

Would something like that work, or do you need a different measurement of distance on water?

US Fleet Tracking (https://www.usfleettracking.com/) does that sort of stuff. They have devices listed as water-resistant, but I have no idea if they are enough to meet your needs on a boat.

There is a company called Holux. They have a model called M-241 Wireless GPS logger. See if that meets your needs

There are a lot of navigation apps for phones, and for that matter some of the boats are equipped with GPS navigation systems (chartplotters) already, but what I am looking for is something that will keep track of where the boat has been without operator involvement...

I was looking at LINXUP (https://www.linxup.com/), which is similar to US Fleet Trackign. I am sure there are others as well, just curious if anyone has any experience with any of these services.
